BEST CAKES EVER!!!

I found several cake recipes that turned out so well that they are now my go-to recipes.

I made the banana cake for a baby shower and it was raved about! BUT I used my own cream cheese frosting recipe. FYI it was near to impossible to cream the sugar and butter. There was too much sugar and not enough butter. BTW I added another 1/2 cup of butter to get the sugar and butter to get fluffy to no avail. Until I added the eggs nothing got "fluffy". Next time I'll use less sugar. Use VERY ripe bananas and you won't notice the loss of sugar.
I wanted pink cream cheese frosting but didn't want to use food coloring. So I used some organic strawberry jam that worked wonderfully.

This next one is a white cake I made because I had made a yellow cake that needed 8 egg yolks.
It's from Cook's Illustrated! BTW This recipe calls for 6 egg whites but I added two extra egg whites and an additional 3/4 cup of sour cream. I did not want to add almond extract so I added extra vanilla extract. It was a hit at church!

Here is the yelllow cake recipe that FORCED me to bake a white cake. I added a cup of vanilla yogurt to the batter because it was so thick.

I use unbleached organic flour with all the cakes. For the white cake I took out 3 tbl of flour and added the same in cornstarch. All my ingredients are organic except for the powdered sugar for my frostings.

I hope you enjoy these as much as my friends and family did!

I just made a pumpkin bread recipe to take to church this morning. It's called Ultimate Pumpkin Bread http://blog.streaminggourmet.com/2009/10/23/ultimate-pumpkin-bread/
it was a hit! I reduced the sugar from 3 cups to two...added a big plop of sour cream and extra on the nutmeg and cinnamon. 1/2 teaspoon extra each. I added cream cheese frosting too. it sat in the frig overnight which I think made it more dense. It was just sweet enough and moist. I hope you all try this too.

I love finding what other people use. I have a few intolerances (not really allergies), and most cake mixes irritate me. Thanks for sharing your recipes!

That's so nice of you. I can always use more cake recipes. I bake so many for the church functions it's nice to add a new one on occassion.
