Paddy, that cupcake looks and sounds delicious! Please please PLEASE post the recipe!
I'm gluten-free, too, but I absolutely LOVE to experiment in the kitchen and tweak "regular" recipes to be GF. Some things totally aren't worth the effort (like fried yeast doughnuts - found that out the hard way), but other things have been absolutely smashing. So, please, share away!

PS - I really love this layout. Something about it reminds me of Florida, so the tropical fruit really fits well. And I love how your eyes get drawn around the page real nice - it's active, without being cluttered. Love it! ;)

Oh, yes please, do share the recipe ! I don't drink pina colada as I'm allergic to alcohol but Nada colada (ie virgin pina colada) is good too, pineapple + coconut is soooooo yummy !!
